With it being earth day today, and a veggie diet contributing to 2.5x less carbon emissions than a meat diet, I thought I’d share my absolute favourite recipe.

I spent a good few months perfecting this ramen dish, and it’s a firm favourite for my whole family, meat eaters and veggies – it is one for everyone

Recipe is in the post but you can really play around with veggies with what you have lying around in the fridge, it is a great recipe to use up left over veg!

If you aren’t a fan of tofu you can add eggs instead, just crack in 4 eggs into the pan and leave to boil for 2 mins before serving!
